White Chocolate Cranberry Cookies

1 stick butter, softened

1 1/2 cups sugar

2 eggs

1 teaspoon vanilla extract

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 1/2 cups white chocolate chips

1 cup dried cranberries

 

Preheat oven to 350 degrees. In a large bowl, using a hand mixer, cream together butter and sugar until smooth, then add egg and vanilla. Slowly add flour, baking soda and baking powder until blended. Stir in the white chocolate chips and cranberries. Place 1 tablespoon at a time on a greased cookie sheet. Bake for 12-14 minutes.

I am not a baker, but when I saw that there was what seemed like a pretty easy cookie recipe, I decided I had to try it. My husband and I both enjoyed the delicious results.

 

The recipe was extremely easy and I already had just about everything I needed in my pantry and on my spice shelf.  The recipe made quite a bit of dough, enough that I was able to bake a dozen cookies and still separate the rest into two parts and freeze the other for another day.

 

If all the recipes turn out as good as these cookies, I will be adding a lot of new things to my menus at home.
